stick to the basics, roast beef or roast chicken. just a little prep time with some seasonings and let the oven and timer do the rest. add some "home made" garlic bread, in other words buy a french loaf and add your own butter and garlic and put it in the oven the last 5 mins with the roast. add a simple lettuce/tomato/onion/cucumber salad with her fave dressing and you're good to go, use the cooking time as a time to just be with her and fuss over her... that is very sad news, will pray for you and your wife...

Add remaining sauce ingredients; bring to a boil; simmer for 1-2 minutes or until thickened.
Add chicken pieces; cook until chicken is cooked throough.
