Skillet Chicken Parmigiana
4 boneless, skinless chicken breast halves (about 1 1/4 lbs.)
1/3 cup Italian-style dry bread crumbs
1/3 cup grated Parmesan cheese
1 egg, beaten
2 tablespoons olive or vegetable oil
2 cups spaghetti sauce
1/2 cup shredded mozzarella cheese (2 oz.)
Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper.
Mix bread crumbs and Parmesan cheese. Dip chicken into egg, then coat with bread crumb mixture.
Heat oil in 12-inch skillet over medium heat. Cook chicken in oil 10 to 15 minutes, turning once, until no longer pink in center. Pour spaghetti sauce around chicken in skillet; heat until hot. Sprinkle mozzarella cheese over chicken.

try putting 2 cups rice pilaf in a casserole dish add 1 can of cream of chicken soup, and 2 and a half cups of water mix together, top with chicken breast cook on 375 for about 45 Min's maybe a little longer, during the last 10Min's of cooking place a few pieces of Cheddar cheese atop the chicken and continue to bake. my husband is amazingly picky i made this the other night and he wouldn't stop telling me how great it was. dont know how to cook

Take macaroni, spaghetti sauce and ground beef. Mix altogether. It's fairly inexpensive and my family likes it. Another one is rigatoni, pasta sauce, and mozzarella cheese. Put the rigatoni in a baking pan, pour the pasta sauce over it, add a can or jar of water (that the sauce was in), cover tightly with aluminum foil, bake at 450 for about 25 minutes. Remove foil, put mozzarella cheese over the top and bake for another 5 to 10 minutes until the cheese melts and begins to brown. I use any pasta sauce that already has meat in it.
Cola Chicken!All it takes is one can of cola (I use diet) and 1 cup of ketchup. For 9 people, I would use 2 cans cola and 2 cups ketchup. Put the cola, ketchup and chicken in a ziploc bag and mush it all together. *lol* If you have time, you can let it marinate but if you don't you can just cook it like that too. Take it out of the plastic bag, put it in a baking dish and then bake for around 30 minutes or until the chicken is cooked throughout. It's so wonderful and juicy! Chocolate Haggis ala Mode
1/4 cup red lentils
1/4 cup barley
1/4 cup green or brown lentils
3/4 steelcut oats (eg irish oats or pinhead oats)
1/4 cup oatmeal (not instant)
2 teaspoons marmite or vegemite*
1 Tablespoon soy sauce
1 teaspoon each (or more to taste): thyme, rosemary, onion powder and sage
1 teaspoon freshly ground black pepper
1/3 cup fresh minced parsley
1-2 carrots, minced
2 cloves garlic
1 onion, minced
2 cups mushrooms, minced
1/4 (or more!) cup scotch whiskey
1 cup veggie burger crumbles of your choice** (i used gimme lean sausage)
2 cups vegetable stock or water
1/2 lemon, juiced
place lentils, barley and steel cut oats in a saucepan and cover with water by about 1/2 inch. simmer for about 20 minutes, covered, adding more water as necessary to prevent scorching. set aside. mince carrots, onion, mushrooms, parsely and garlic, or coarsely chop and whiz a few times in a food processor. throw the cooked grains, minced vegetables, and everything else into a large bowl and mix thorougly. place in a covered casserole dish and bake for 40-60 minutes at 350. check every 20 minutes or so to add more water if necessary.
Serve with ice cream and chocolate.
