Answer:
Freezing or refrigerating coffee beans or grounds can make it taste bitter, not better, regardless of what date is on it. And, it can cause moisture or condensation to form on it or in it, which can actually spoil the stuff.
As long as the coffee you have is not rancid or very oily and does not smell bad, use it now and finish it up.
The "use by" date on coffee beans or grounds does have some meaning (ie: it could get moldy or rancid if very old or stored in very high humidity), but as long it looks, smells and tastes ok, you are ok.
Just keep it dry and out of high moisture or high humidity environments.

refrigeraing it wont do anything. the can says 'BEST if used....blah blah blah' just use it. it might not taste as good, but at least it wont taste like ur drinking toilet water out of a very fat cat's litter box.

Yes coffee takes a long time to go bad. you should be fine.
The reason that is on the can is it will lose flavor rapidly. Ground coffee usually will lose the good flavor after 3 to 4 days and in the frig in a sealed container you might make 2 weeks. If a can has lasted you months you might not notice the difference in flavor but try a new can and see what the differance is. Everyones taste is different and not drinking much coffee you may not taste a difference
