We brew our own Kombucha at home and no, it is not suppossed to have fizz.
The Kombucha potion is ready when it stops bubbling or having fizz. When it is still bubbling it taste like young wine and contains more alcohol. If you wait much longer after it is being ready, the potion gets more sour. You can test the potion by taking a spoonful and taste it.
