Answer:
Well, look. I object to people who think they don't want to drink alcohol but they want alcoholic beverages anyway. There's a world of flavor in fruit smoothies and lemon sodas and chocolate almond lattes; why bend over backwards to make a bastardized version of a good bar drink?

In most cases, the substitute for vodka can be plain water; vodka has no specific taste or aroma, it's pure alcohol and water.

Many alcoholic beverages have 'virgin' versions that simply involve leaving out the booze. And on occasion when I've had a desire to avoid consumption, I've had a diet coke with lime (e.g., 'virgin' cuba libre) or a ginger ale with twist, etc. Mai tai and daiquiri are good in 'virgin' versions.

But for a 'virgin' martini--fahgeddaboudit! The noble martini is a pure indulgence made with gin (preferably the best you can find) and dry vermouth (ideally Martini and Rossi, hence the name) and garnished with an olive. If you substitute vodka for the gin you have a vodka martini. If you are one of those poseurs who actually doesn't want vermouth, then you should order straight gin and quit mucking around about how your martini isn't dry enough. If you're one of those people who thinks you can mix berry juice and chambourd and stoli strawberry and call it a martini, please start calling yourself a poodle.

And if you want a martini that's non-alcoholic, it will only happen in your dreams.
The real stuff or a cup of Tea!
I read somewhere a long time ago that a substitute for vodka in recipes would be white grape juice.
