Very simple. Brown the sausage very well. Cut peppers into wide strips and saute in olive oil. Then mix together in a casserole and cover with tomato sauce. Home made marinara is best, but when I'm in a hurry I just use a jar of Bertolli. Stick in the oven to warm for half an hour, or you can stick in the fridge for a day or two and warm later. Serve with large crusty Italian rolls for sandwiches. Good stuff! The guys in my family love it for football game days.

You didn't specify what type of sausage and I have favorites using different varieties. A real easy one is to slice sweet Italian sausages into 1/4 inch chunks and sautee them with sliced red, green and yellow peppers. Drain the grease from them, add a medium-sized jar of marinara sauce and about 4 Tblsp grated parmesan cheese and let simmer about 15 minutes. Split a hoagie roll, baste with garlic butter and toast till lightly browned. Spread inside bun with Ken's Vidalia Onion Dressing (trust me), then spoon sausage mixture onto each roll. Top each with chopped black olives and shredded mozarella and melt under broiler. Add a simple pasta salad on the side and it's one of our favorite weekday meals when you need something in a hurry!
My husband's variation is to sneak in jalapenos when I'm not looking.
I like to minced the sausages and stuff inside peppers. Then pan-fry. Yummy!
