I know its just the sell by date and it would probably be good for several more days, but I opted not to buy it. I'm just curious what you would do?

I would of done the same thing. Because if it was rotten i would of wasted money and it happened to me once i bought a gallon of milk a couple days before the sell by date and it had a funky smell so it must have been rotten. (i didnt bother to taste it though)

Many stores would allow you to purchase it for a reduced amount. The 'sell-by' date accounts for the period that would elapse if purchased by this date and has normal usage; cold storage and normal consumption, usually a week thereafter.
I might have but only because I drink alot of milk. I would dig around the rack. Just keep going further to the back until you find a fresher one.
No, I would not buy milk from a store if the sell-by date is today because think about how many times the refrigerator is opened at the grocery,I believe it has a lot to do with the storage. The only time I will drink milk after the sell-by date is if I know it has been properly stored.

Bad experiences as a child, my step-father leaving the old milk in the refrigerator, me pouring it on my cereal, me commenting that it tasted funny, my step-father not saying a word. Later on in life, him laughing that we drank "sour" milk. :)
I think it would depend on how quickly you would use the milk. If you are using a recipe that requires a large amount of milk then I think you would be okay to purchase. If you just drink one glass every day then I would opt for a container with a later date. (I'm a date scrounger.I always dig on the shelf for the latest date!)
