Any Ideas on a lunch I can prepare the night before...pretty fast, don't wanna spend an hour making lunch...that I can refrigerate or leave out for the next day? Besides the basic sandwiches or pasta salad, thats what I have been taking...plus yogurt and fruits

Answer:
cold baked potato with light sour cream and salad
chicken salad
risotto (takes 15min to make or use packey ones)
make a quick quiche
hokkin noodles (add jar of sauce) they are really yummy cold
egg and lettuce sandwich
left overs from dinner
dried biscuits (ham cheese tomato)
tuna salad
zuchini slice
cold rice salad
herbed veggies
hard boiled eggs
chicken ceaser salad
cold pasta with pesto
My favorite lunch is soup, and if in a thermos container will stay nice and hot. There are some quite good canned and frozen soups nowadays, and there are several which are extremely easy to make. Homemade soup has the advantage of low calories.
Try preparing wraps, or using different exotic breads, and different meats to change up the classic sandwich lunch. For example, I use whatever meat I have left over from dinner and turn that into a sandwich, but change up the ingredients and bread daily. Lets say you have leftover beef, make a sloppy joe for lunch by just adding some bbq sauce and onions etc. Tacos are also easy to make for lunch, since you can buy kits in the supermarket. Have fun with it.
How about trying a cous cous salad, its really good for you and very versatile. This is a good recipe

Ingredients
110g/4oz couscous
hot water, to cover the couscous
55g/2oz frozen peas, cooked
salt and freshly ground black pepper, to taste
? red onion, chopped
1 handful of fresh coriander, chopped
2 tbsp olive oil
1 lemon, juice only



Method
1. Place the couscous into a large bowl and pour enough hot water on top to cover. Stir, then leave for 4-5 minutes to stand, or until the couscous has soaked up the water and has become soft and chewy.
2. Stir well, then add the cooked peas and season to taste.
3. Add the chopped red onion and the chopped coriander.
4. Stir to combine, then drizzle with the olive oil and lemon juice.
5. Stir again, then spoon onto a large serving plate or bowl, to serve
I like to make interesting salads. BLT salad, taco salads.
they have these really good Chinese dinners at wal*mart
and it comes with nice chicken nuggets veggies rice and a nice watering mouth full of sweet and sour sauce yummy ready in about 3 minutes about $3.00 makes you full to the tummy mmm...
Cold pizza, or soup.
