Answer:
I have been to Bobby Flay's Rest. the Mesa Grill! The food and atmosphere was outstanding! Although he spends much time taping shows and participating in charity events, he does "oversee" operations from time to time in his restaraunts. I actually met him at Universal Studios a couple years ago when he was taping a special for food network. He is very personable and accomodating to his fans. You may also be able to contact him through the Food Network site.
Good Luck to you!
why don't you contact his show or restaurants by e-mail, they may be able to answer your questions there.
He probably never cooks at any of his restaurants, he is probably never at any of his restaurants. Those big time celebrity chefs never are. He probably helped come up with the menu, helped out the first few weeks, and then was gone. Thats just how those places are.
