so the butcher told me that it would be better to age a prime rib roast for 14 days, which i have done. he also said that after the 14 days it might smell a little funky, and it smells real funky. he told me to cut off the funky part, then cook it like any other roast...help because i'm cooking it today. has anyone else tried this. i'm a little nervous to cook it and eat it!!! thanks for the help

14 days of aging (in your own home) sounds like quite a long time. If you buy aged beef in the market, it may have been aged that long, but under controlled conditions.

I do age my own beef (rib roasts, and other cuts), but I've never done it for more than 6 or 7 days. You do want to cut off any "funky" parts, but I would also suggest rinsing the roast (cool, running water) too. Pat it dry with paper towels before you proceed to cook it.
the longer beef ages, the more "amines" it builds up. Amines can cause serious reactions to anyone sensitive to them. They cause a release of histamines and glutamines, flooding your system with them. If you suffer from any type of allergies, arthritic pain, joint pain, skin conditions (excema, psoriasis, etc) you will set off a flare in your system, as these conditions are usually caused by amine rich foods. Personally, I couldn't eat decaying (aging) animal flesh under any regards, and most certainly if it didn't smell right. I would be wary, but do what you think is right
