By "peel", I mean the very thin, green, outer-most layer. I know that the white, fleshy rind is edible. What about the peel?

In this case, what I'm mostly concerned with is safety. My son will eat a slice of watermelon completely: peel, rind, and all. Is this a safe thing to do?

I'd also be interested to see recipes that describe using the peel (again, the outer-most green layer).

Yes, its edible. Also, it has much more nutrition than the sweet part (red) of the watermelon. I always eat the whole thing. I very rarely get sick. My uncle told me about this. I think its true

I don't think it is very tasty but my mother used to make watermelon rind jelly and she used the entire rind.


Yes the peel is edible. My mother would blanch it in hot water, then pickle it. It's actually real good. OMG!!! I though my gramma was the only one who made jelly/preserves from the rinds.
