Answers:
Hard flour, or "bread" flour, is high in gluten and so forms a certain toughness which holds its shape well once baked.

Soft flour is usually divided into cake flour, which is the lowest in gluten.

All-purpose flour is a blended wheat flour with an intermediate gluten level which is marketed as an acceptable compromise for most household baking needs.

Other Answers:
i'm pretty sure bread flour has more yeast than all-purpose and cake and cake has the least and all-purpose has the in between
I THINK

Curious has the right answer.
There is no yeast in any of the flours you mentioned. It is the grade of flour that is best for Cakes, bread etc.
