Cream of wheat, short of tasting and looking like wallpaper paste, is farina. Couscous is a pasta made of semolina, a totally different animal. ;) Couscous should also be fluffy and light when cooked, there should be no residual moisture in the pan.
Cream of wheat is a hot wheat cereal and cous cous is pasta, so no you can't really use cous cous for thickening. Common thickeners are cornstarch, arrowroot powder, flour or potato flakes (like instant mashed potatoes).
I think couscous is made from the chickapee bean.
