Traditionally, buttermilk is the liquid left over after producing butter from full-cream milk by the churning process. What you find the grocery store today is usually cultured buttermilk, that is milk to which Streptococci bacteria (a souring agent) have been added to simulate the cream. Even though buttermilk has a slightly sour taste, it is NOT sour mil and I would not recommend substituting Sour milk for Butter Milk. Sorry! The way to tell if Buttermilk is bad is usually the expiration date on the carton or, if the butter milk curdles, in other words, has lumps in it.

Buttermilk has not had the butter skimmed off. (that is where your butter comes from) It is a lot richer then whole milk or skim milk. you can freeze buttermilk to keep it fresh for when you need it. Buttermilk can sour like whole milk. You can substitute sour milk in a recipe, however make sure you add some soda to remove the taste and smell. Check a encyclopedia of cooking for the correct proportions. Make sure you stir the sour milk well before adding to a recipe. Shaking it up in the container is best. buttermilk was originally the liquid that was left after the butter was churned...today it's made commercially by adding special bacteria to nonfat or lowfat milk, giving it a slightly thick texture and tangy flavor...some manufacturers add flecks of butter to give it an authentic look...contrary to the name, buttermilk is actually lower in fat than regular milk...you don't want to substitute spoiled milk, but I've found that it will last well past the expiration date
