Another person (below) said it was just all the extra bits ground up - this is mince pork or pressed ham (as opposed to ham off the bone), not bacon.
A few people said the belly and it's true that bacon can be made from pork belly meat. However, it can also come from the animal's back, rump or even legs. Back bacon, for example, comes from the pig's back (obviously) and is much leaner than belly bacon.

im pretty sure its jusst the extra parts they grind them all together and then flaten them out!
