Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

in a local produce department. a russet is a potato u can almost use for anything. a russet is a bigger potato idahos are the same. yukons are also known as a golden or yellow pototo. they make good mash pototas. adn when ur making a dessert. red skined potato good for potato salads and strews to add some color and less cooking time to. a purple potato dessert and goes with meat very well. and there nice in color. sweet potato and a yam there is a different between them but most people dont know that. i dont like them so i cant really tell u other then one is sweeter then the other and there shaped different. there good for baking.

Potatoes can seem mysterious, even if your store carries only a few varieties. And with the recent renaissance of sorts in the potato world, there are more and more varieties available. Also, stores are not consistent about identifying what you’re buying. For example, there is no Idaho potato, but since 99% of Idaho’s potatoes are Russets, many stores call Russets Idahos.

Some of the names you’ll see them under in the supermarket are Russet Burbank, Russet Arcadia, Norgold Russet, Goldrush, Norkotah, Long White (or White Rose or California Long White), and Idaho.

Selecting suitable varieties is an essential first step in any successful potato operation. Varieties must not only suit the intended market but also be well adapted to local growing conditions. Hundreds of varieties are potentially available to potato growers but as few as five probably account for 90% of the U.S. acreage. The leading variety, Russet Burbank, still provides about 40% of the U.S. production.

Varieties differ in a number of characteristics including: yield; skin and flesh color; tuber shape and eye depth; time of maturity; disease and pest resistance; carbohydrate composition; usage potential; dormancy and storability; and any number of additional particulars. Processors typically specify varieties in grower contracts, but not always. Fresh market growers, on the other hand, are free to choose.

Potato varieties have traditionally been categorized according to shape and color as Round Whites, Russets, or Reds. Recently, "Specialty" and "Gourmet" have entered the potato vocabulary to describe almost any variety not fitting into the three major divisions. Broadly speaking, round-white varieties are used for chipping and, to a lesser extent, as tablestock in central and eastern states. Reds and speciality gourmet varieties are used exclusively for the fresh market. Russets, which tend to produce oblong tubers, are used for both frozen processing and fresh market.
