i bought a frozen dinner from wal-mart called "chili rubbed chicken" and it was suprising very good its label was sams choice. how could i ever find the recipe to this or something very simiar, it could only be better freshly home made

1 whole chicken, innards removed and washed
2 chipotles in adobo
1 cilantro sprig
2 cups Spanish extra-virgin olive oil
2 garlic cloves
1 white onion, chopped
1 jalapeno, chopped
Salt and freshly ground black pepper

Preheat the oven to 375 degrees F.

Wash and pat dry chicken and refrigerate. In a food processor, blend the chipotles, cilantro, olive oil, garlic, onion, jalapeno, salt, and pepper. Rub the chili mixture all over the chicken, inside and out. Season with salt and pepper, inside and out. Roast for about 35 to 45 minutes, or until the chicken is cooked through and the juices run clear. Allow the chicken to rest 15 minutes before cutting.

This chicken recipe calls for a very basic rub that is heavy on the chili powder. Adjust the heat by changing the amount of cayenne.
INGREDIENTS:

2 pounds chicken cut up and skinned
1/2 cup chili powder
3 tablespoons brown sugar
1 teaspoon black pepper
2 teaspoons cayenne
PREPARATION:

Mix chili powder, brown sugar and cayenne together. Rub mixture all over chicken pieces. Allow to stand for 1 hour. Preheat grill. Place on grill and cook until done. When turning be careful not to displace the rub. For additional flavor add pre-soaked hickory or mesquite wood chips to the grill before cooking.
