Originally, Canadian bacon was bacon made from the back (loin) of pigs that were popular in Canada - Tamworth and Yorkshire. They were far leaner than the typical American pig and also longer, yielding more bacon, and a leaner bacon. The Canadians and Europeans refer to this as back bacon, not Canadian bacon. It was also cured slightly differently, using a peameal coating to keep the brine in.

Today, Canadian bacon is made from about any cut of pork that isn't being used for something else, but usually the loin. Plus, the mass production brining techniques don't have near the flavor of the traditional methods, so it can be difficult to tell the difference between Canadian bacon and ham other than the way it is cut.

there is not Canadian bacon make from pork loin very lean cut of meat. Canadian ham ,I don't see any different from any other ham
