Semantics to me. Shrimps are usually smaller, and are prepped so no head and shell. Prawns are usually larger, like 26-30+ and has the shell or the tail and butterflied. I think prawns should only be used to describe a full-shrimp, like with head-on and everything. Restaurants use the word prawn as a fancy way to say shrimp, like when that's the focus of the dish, vs. shrimp is used when it's tossed into the dish as an ingredient or used as a topping.

Essentially nothing. Some say prawns are bigger, but that could just be semantics. As for a recipe, use the best you have of either (whatever your grocer calls them.) You'd do that anyway, right?
