To set the mood and it is more relaxing. When things are more relaxing the customers feel more comfortable. Thus they Will buy desert and fine wine.
Also, the darken interior is psychological (in America its all about cash flow)it seduces the mind and makes you hungrier-you eat more (like I said above).
I like them that way. I hate a bright restaurant with white walls, white candles, and white table clothes.

Those are mostly the elegant restaruants, but i think because they want the place to be a very calm and relaxing atmosphere
why your grammar is so crappy? Normally I'd say its so dark in American restaurant because Americans are fat and ugly but then everyone would come down on me in a great, patriotic dog pile.
so others cant see you play touchie feelie..no, actually i like it dark. too bright is not nice. i eat at steak houses which are generally dark as a catacoomb..whereas a buffet style eatery has massive lights-reminds me of a night game at pacbell park
