aside from the fact that anything packaged in a cardboard carton starts to taste a little like everything in your fridge after a couple days -- I wouldn't want to risk the side effects of eggs gone bad
in science lab, we used to use egg whites to culture a lot of things.
The shell of the egg is a good protection for the egg but it is eventually not enough to keep the bacteria out. Also the food does begin to break down and you will not get all you need from it if it is not fresh.
