Homemade Italian Spaghetti Sauce
Ingredients:
4 tablespoons olive oil
8 garlic cloves
1 large onion
1 large green pepper
8 ounces fresh mushrooms
1 (6 pound 9 ounce) can tomato puree*
2 tablespoons Worcestershire sauce
1/2 cup dried oregano
1 1/2 teaspoon chili powder
2 teaspoons salt
3/4 teaspoon pepper
3 tablespoons sugar
2 teaspoons cinnamon
1/8 cup basil
1 teaspoon garlic powder
Directions:
Mince garlic; chop onion, pepper, and mushrooms. Saute garlic in hot olive oil briefly, then add onion, pepper, and mushrooms and continue to saute. Add tomato puree and stir well. Add spices. (If you like, add a little less than the full amount of each spice at first to ensure that you don't add more of a particular spice than you like.) Simmer at least one hour, then taste sauce to test the spices and add more as necessary. The sauce must be simmered for at least three hours, but is best when simmered for several hours. Serve over angel hair pasta or capellini.
* Or the equivalent amount in smaller cans. All seasonings are measured based on the warehouse-sized can of tomato puree. My mothers original recipe called for 1 large can tomatoes, 1 large can tomato puree, 2 cans tomato paste, and 1 can tomato sauce. I don't know the exact size of the cans she used, and I find that using the large can of tomato puree works best.

Are you talking homemade from fresh tomatoes or using canned tomatoe sauce, fresh minced garlic, onions, lean ground beef, celery, mushrooms, green pepper, spices like oregano, thyme, etc. Stuff like that. I just use a plaine tomatoe sauce and add spices to that. This is how I do it. Cut 1 big onion or 2 medium onions and 2-3 cloves of garlic. Melt butter (some use olive oil) and fry in skillet until just translucent. Remove to a big pot. Add 1 big can of crushed tomatoes to the big pot. Fry up whatever vegetables you like (diced zucchini, pepper, mushrooms,etc.), adding more butter or oil. Last fry some ground beef cutting it with the spatula to make it fine. Add 1 cup of red wine to the tomatoes, 2 tablespoons of sugar, some Italian Seasonings and dried basil. Cook, stirring often, for about 45 minutes to 1 hour. Sometimes, if its getting too hot, I turn it off for a while and then continue to simmer it.

Thinly slice onion and crush 3 cloves of garlic. Sautee in 2 tbsp. olive oil in bottom of heavy pot. When onion is translucent and caramelized, add 2 large cans of plum tomatoes with juice(crushed-squeeze through fingers) and 1 can of water. Simmer until reduces by 1/3.(Approximately 1 1/2 hours) Then add 6 oz. can of tomato paste, 1 tsp. oregano, 1 tsp. basil, 1 tsp.sugar, 1 tsp. salt. Cook until this thickens (approximately 1 hour). Taste and check for seasonings. At this point you can add meat or chopped vegetables(mushroom, bell pepper) What ever you like. We serve it plain as marinara sauce. go to allrecipes.com
