You could probably pick any of the fried chicken recipes, and then just coat them in the buffalo sauce after they are cooked.

You have to find a chicken that has never eaten any animal products. Most chickens only feed on corn and other grain products so normally you could be safe, but you never know if a certain chicken has eaten meat, so its best to ask the farmer to select a chicken for you that he is 100% sure it is a vegetarian, and then you can kill that chicken, and cook its wings. Make sure to tell everyone who eats them that you are sure this chicken was a vegetarian, so they can be sure they are eating vegetarian chicken wings.
I don't know about chicken wings, but quorn are making the most yummy "chicken" dippers now. I bought some at Iceland.
