Please specify the brand of beer you prefer. I'd like to make this for my hubby for Father's Day. The batter will also be used for onion rings.

Ingredients :

2 lb Haddock, fresh, in 3-inch lengths
BATTER
2 bottle of beer (any one may do)
1 cup Flour
1 tsp Salt
1/2 tsp Pepper

Method :
Mix flour, salt, pepper and 1/2 to 1 bottle of beer (depending on how thin or thick you would like the batter).
Remember, always add more flour if batter is too thin.
Dip pieces of haddock in batter and place directly in a pan of hot oil on the barbecue or place haddock directly on the barbecue.
Cook each piece for 5 minutes and turn when golden, then cook other side for 5 minutes until golden - low to medium heat.
When cooked, drizzle with lemon

seasoned flour

115g (4oz) plain flour
pinch of salt
2 x 15ml spoon (2 tablespoons) oil
150ml (5fl oz) light beer (corona!!)
1 large egg white

Method


Preheat the oil to 180°C/350°F


Prepare batter: sieve flour and salt into a bowl, make a well in the centre, pour in oil and beer, and carefully mix into the flour.

Whisk the egg white until stiff and fold into the batter.

Coat the fish in seasoned flour and dip into the batter; drain and lower into the hot oil.

Fry until the batter is crisp and golden.


Remove from the oil and drain on absorbent paper.

any beer light in calories, or use a light cooking oil and a pinch of butter and then add a little beer, you will find it fries up nice, very low flame, the heat will build on the pan and do the cooking for you.
