Well based on my experiences with appalachian cooking--i would suggest 2 types. A breakfast gravy--3 tablespoons of flour+2 cups soy milk, and a teaspoon each of garlic and bacon bits.
Next for a dinner gravy garlic, 5 Tbsp on flour make a dark roux then ad a cup of soy milk, parsley, salt, peper
