Use fresh or frozen blueberries to make these blueberry muffins. More blueberry muffin recipes below.
INGREDIENTS:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar 1 cup buttermilk
2 eggs, beaten
1/2 cup melted butter or margarine
1 1/2 cups fresh or frozen blueberries, rinsed
2 tablespoons all-purpose flour
Sugar for topping
PREPARATION:
Sift flour, baking powder, salt, and 1/2 cup sugar. Add buttermilk, beaten eggs, and melted butter; mix until dry ingredients are just moistened. Mix berries with 2 tablespoons of flour; fold berries into batter.
Spoon batter into greased muffin pans, filling each muffin cup about 2/3 full. Sprinkle each with a little sugar. Bake at 400° for 20 to 25 minutes.
Makes 18 to 24 muffins

3/4 cup unsweetened applesauce
1/2 cup honey
1 tsp. vanilla
1/2 cup nonfat milk
3 egg whites lightly beaten
1 cup frozen blueberries defrosted and well
drained)
I n s t r u c t i o n s :
Heat oven to 350. Pulse rolled oats and oat bran in food processor for 10seconds. Reserve 2 tbs. oat mixture; in medium boil, combine remaining oatmixture with baking soda and cinnamon; mix well, set aside.
In small bowl, combine applesauce, honey, vanilla and milk; pour into oatmixture. Stir until just blended. Gently mix in egg whites. Do notovermix.
Dust well drained and dried blueberries with 2 Tbs. reserved oat mixture;gently fold blueberries into batter. Divide mixture evenly into nonstickmuffin pan and bake at 350 for 20-25 min, or until toothpick comes outclean.
Cool on wire rack for 10 min. Remove from pan.
