Make a big yummy sandwich! I love nice thick bakery bread with lulnch meat, cheese, lettuce, tomato, banana peppers and mayo and/or mustard. Throw some chips with it and you have a nice light lunch!
Just get a can of white meat chicken and make chicken salad -- you can jazz it up by adding sliced grapes, walnuts, things like that, along with the mayo, mustard, salt and pepper. My grandmother used to add chopped, boiled eggs to her chicken salad and it was really good. I like to eat mine on a lightly-toasted croissant.
Pasta salad, mixed with mayo or salad cream. Cook the pasta then run cold water over it to cool, add chopped tomatoes, cuecumber and anything else you like, cheese, ham,grapes, anything goes. Yum
Ham & Cheese Wrap
Put mustard or mayo on a flour tortilla and load it with your favorite lunch meats. (I like ham & cheese), put lettuce, tomato, pickles, whatever you want, and roll it up & eat. YUM!!
wraps are great and you can put anything in them!! some that i like are
1 large tortilla (i like the misson brand some of the flavored ones are good too)

2 cheese slices
2 slices of each of your favotire lunch meat (i like to mix ham & turkey or turkey & roast beef)
lettuce (add onion & tomatoe if you like)
1-2 tbs of your favorite salad dressing (i like raspberry vinagrette)
#2 - all measurment are approximate - use what you have
2 slices american cheese
2 slices turkey or chicken
shredded cheddar cheese
1/4 cup cold - precooked rice (white rice, spanish rice, dirty rice - last night's leftover rice)
1/4 cup cold corn (last nights left overs or open a can of corn & drain it)
2 tbs your favorite salad dressing
to make the wraps lay your tortilla on a plate lay you items out lengthwise off to one side then roll it from that side so the other side has plenty of extra tortilla to go around
if you ar taking it with you to work - make it on wax paper instead of the plate then roll the wax paper around it and twist the ends so that it does not fall out the ends!!

A really good soup is boil water put chicken or beef flavoring in the water and add some spices if you wish. then put in instant rice let it cook til rice is soft then eat. Its really good i make it everyday

I love fresh foods, so I hope you do too! Try a pasta salad, mine takes a total of twenty minutes, and everyone says it's amazing. Pick any type of pasta you want, I get a diffrent type every time! While your pasta is cooking, chop up whatever vegetables you choose to put in the salad. I use green peppers, mushrooms, vidalia onions, cucumbers, roma tomatoes, and carrots. For the carrots, cut them in small circles, and stick them in a bowl, and cover completely with water. Put them in the microwave for about 2-3 minutes, so they are aldente, you don't want them too hard, and you don't want them soft. I always cut up an 8oz block of cheese to throw in there too. While the pasta finishes cooking, throw all the vegetables, and meats if you choose in a bowl with a bottle of dressing, or use a home made dressing. I use Greek dressing. Let that marinate while you strain the pasta and let it cool. Mix it all together, and you've got a delicious side dish or meal!

They make all types of bottled sauces now, including spaghetti, alfedo, and cheddar. Buy a box of noodles, and heat up a can of sauce, then throw in some meat and/or veggies! I like alfredo sauce,chicken, broccoli, mushrooms, and onions over smaller pastas like farfalle, shells, or radiatore.
Buy a pe-made pizza crust, spread some philadelphia cream cheese, and cut up cauliflower, broccoli, grated carrots and cheese and sprinkle theese over top! Very good!!!
I love au grautin potatoes, and they make them with jalepeno peppers now, so try a box of those! They make a great side dish.
Vegetables (cucumbers, peppers, carrots, tomatoes) dipped in anything is a good healthy snack! Try salad dressings, and pre made dips from the store. They also make cream cheese fruit dip, it comes in diffrent flavors too! Melons, berries, even apples go great with that!
Instead of buying packaged meat, go to the deli, and buy fresh meat! It's a lot cheaper, and doesn't have all the preservatives... sodium, and calories!!! Plus the difference in taste will make you never go back to the packaged stuff!
Some quick desserts:
Cut a pint of strawberries in half, or quaters, them with one container of glaze, and throw in a a pre made pie crust, I use the graham cracker crust! Top with whipped cream, or eat plain.

Top with whipped cream or cool whip (cool whip is non dairy, so it's better for allergies, however its all suger and preservatives!!!)
If you like eggs, you can make them any time of day, I only use egg whites for my family (but don't tell my husband). The yolks are full of fat and cholesterol! Make scrambled eggs, or omlettes. Deviled eggs are usually a big hit. Hard boil the eggs, cut the eggs in half, and scrape out the yellow part, keeping the white part in tact. Mix the yellow part iwht some miracle whip, and if you want onions and celery, and put back into white part.
This takes a little longer, but its spectacular! Bake potatoes in the oven for about an hour (until done) and then cut them in half long ways, and scrape out the poatoe part leaving the skin in tact. Mix the poatoes with cream cheese or sour cream, broccoli or spinach, and anything else you think would be good in mashed potatoes. Fill the skins back up with this mixture, and then sprinkle with cheese. Put them back into the over for about ten minutes! Wonderful!

Chicken breast chopped
mayo
onion
salt & pepper
green pepper and celery!
Serve on whatever bread or bun you like!

Chicken Fajitas (using sandwich maker)
Makes 12 pockets
1 lb Chicken Breast; boneless and skinless
Sauce
1/2 cup Soy Sauce
1 cup Orange Juice
1 tbsp Lemon Juice
1 tsp Sugar
2 Cloves Garlic; crushed
1/2 tsp Ginger
------------------
1 tbsp Oil
1 medium Onion; sliced
1 Green pepper; sliced
1 Red Pepper; sliced
12 Flour Tortillas (6-8 inch)
Cut chicken breasts into strips 1/4-inch thick. Combine all sauce ingredients and pour over chicken strips. Cover and refrigerate overnight. Drain meat well and stir fry in oil along with onion and peppers until all pink color is gone from chicken pieces and vegetables are crisp-tender.
Preheat sandwich maker. Trim sides from tortillas to form squares 5 X 5 or 6 X 6 inches. Brush outside of each with oil. Lay 4 tortillas on pocket grid oiled side down. Spoon chicken mixture into the triangle shaped pockets. Top with tortillas, oiled side up. Close lid and cook 3 minutes or until tortillas are heated through and sealed. Repeat with remaining ingredients.
