i've worked at subway they come in clear bag and it only tells that they are white macadamia nut cookies what temp to store and how to cook them.
Yes it is a dough you can buy at your local supermarket (sorry i cannot recall the brand)(Ill ask mum and update next time i see her) and they cook them at 90 degress celcius for 4 hours

Macadamia nut cookies with cinnamon and nutmeg.
INGREDIENTS:
1/2 cup shortening
1/2 cup butter
1 1/2 cups sugar
1 egg, separated
3 cups flour
1 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup milk
3/4 cup chopped macadamia nuts
PREPARATION:
Cream shortening and butter; add sugar and egg yolk, beating until light. Sift together flour, baking powder, cinnamon, salt, and nutmeg; add to creamed mixture with milk, blending well. Chill for 2 hours. Roll out to about 1/8-inch thickness on a floured surface. Cut dough into 3 x 1-inch strips. Brush cookie dough strips with a little egg white then sprinkle with chopped macadamia nuts; roll lightly with a rolling pin to embed the macadamia nuts.
Bake Macadamia Nut Cookies on greased baking sheets at 400° for 10 to 12 minutes.
