Hydrogenation is when hydrogen is added to fats to give them a longer shelf life. Manufacturers do this. I don't think it's a direct result of high heat, but I'm not positive.

olive oil is no good for high temp cooking. It will burn and make the food taste like crap. Go with Peanut oil for high temp cooking

regular olive oil is good for cooking, but not at high temps
virgin and extra virin are not good for cooking they will burn quicker, they sould be used in recipes or dressing where you will taste the oil more. extra virgin is used for more flavor No. Hydrogenation is not possible with high heat.
