well as far as veggies go just take lots of "finger food" veggies and take a cooler. carrots, celery ... fruit..... those snack bars.....
i think one of the easiest and best things to take when traveling is Wraps..... take a tortilla and whatever you like and wrap it up.. here is a recipe for a Cajun Veggi Wrap::
Cajun Veggi Wrap
1/4 cup chopped celery
1/4 cup chopped onion
1/2 cup cooked white rice
1/2 cup chopped tomatoes
1/2 tsp. Cajun seasoning
4 oz. cream cheese
4 flour tortilla wrappers
Saute celery and onions until lightly browned. Add
rice tomatoes and seasoning. Heat until warmed through.
Spread cream cheese on tortilla wrappers. Top with veggi
mixture and roll each tortilla tightly. Serves 4.
you could add or take away anything.. good luck!
Alain Passard's famous multi colored vegetables. Cooked to perfection with dandaragan estate olive oil (australia brand). Its about $30 US.
Ok fine I'm not Alain Passard, neither do I work at L'Arpege, but I know a few good vegetable recipes.
Rocket Leaves (Arugula)
Waxy potatoes (good types like maris piper)
freshly made mayonnaise
dijon mustard
best olive oil you can find
vinaigrette (small portion)(must be fresh)
fleur de sel and white pepper
cherry tomatoes
BASH EM togehter (toss) and put in tupperware
A LA JAMIE OLIVER:
red peppers roasted directly on fire for a few minutes, then put in paper bag for 5 minutes, then peel!
Italian mozerella (torn)
Good quality salad leaves
Lugs of olive oil
BASH EM together n enjoy
Vine riped tomatoes (sweeter the better)
Red Onions (diced and chopped)
Vinaigrette, homemade w/ best ingredients
Maldon salt, white pepper
mix together nicely!
Lightly roasted mixed vegetables, olive oil (can be grilled too)
