I've inviting some really good friends over to my house for dinner but one of them is really struggling with her weight so I want to make a really yummy but not too fattening salad for dinner so she doen't feel uncomfortable having to eat something she normally wouldn't. I also don't want her to feel guilty later for going off her diet. Any suggestions?
Answers:
Get some romaine lettuce, some red onions, a lil bit of bacon, 4oz of chicken, strawberries, pecans and tomatoes.
mix together the lettuce, red onions, bacon, strawberries, pecans and tomatoes
Season the chicken with some paprika, salt and pepper to taste.
Cut the chicken in stripes, and add to the salad.
Dressing: Mash some strawberries with a little bit of garlic, olive oil, and a little bit of apple or white vinegar. mix together well, let it for one hour or more.
Grill the chicken with I cant believe is not butter spray.
this is very healthy and yummy.
for dessert: get some pineapple (from the crushed can), mix it with some mango (from can also) and then put it in the freezer and move it every 30 mins or less, just don't let it get too hard.
it is a very nice sorbet.

I love spinach salad with grilled chicken pieces grape tomatoes some parmesan and feta cheese and vinagairette dressing Romaine lettuce, Censure Sauce, lots of onions, a half pound of shrimp. Just kidding. Make something fattening, with something good to drink, and laugh latter about how your not a good friend for encouraging her to eat happily.

10 cups fresh spinach or torn salad greens
1 small red onion
2 cups sliced strawberries
1 cup halved green grapes (optional)
1 (8 ounce) can mandarin orange segments (optional)
1 cup chopped walnuts
1 tablespoon poppy seeds
2 tablespoons sesame seeds
Honey Salad Dressing
1 teaspoon paprika
1/2 teaspoon powdered dry mustard
1/2 teaspoon salt
1/2 teaspoon celery salt
1/2 cup honey
3 tablespoons lemon juice
1/4 cup vinegar
1 cup salad oil
1. Mix the dry ingredients.
2. Add the honey, lemon juice and vinegar.
3. Slowly add the salad oil, beating until well blended.
I like to coat boneless skinless breasts with one of McCormick's Salt Free seasonings. You may need to pound the chicken if it's really thick at one end. Sear the chicken in a little bit of olive oil on high heat in a stainless steel pan for about 2 minutes a side. You want to carmelize the outside, but not burn it. Put the pan in a preheated 350 degree oven, cook 15-20 mins. This piece of chicken is very versatile and goes with a salad really well if you let it cool a bit. Just because she's on a diet doesn't mean she can't eat some chicken especially if all the rest of the salad is vegetables. Make sure you get a fat free salad dressing and you're good to go.
Other uses for my chicken recipe:
You can cut it up and put it in pasta with chopped fresh tomatoes, olives, and some olive oil.
You can dress your pasta with a regular pesto or sun dried tomato pesto instead of fresh tomatoes. Pesto is easy, put sun dried tomatoes, fresh parsley and basil and olive oil in a small food processor. Process it into a paste and put on the hot pasta and chicken. You can leave out the sun dried tomatoes and add pine nuts and parmesan instead if you want.
You can slice the chicken and serve it on a roll as a sandwich or you can eat it as is. I serve it with cous cous or rice that I prepare with olive oil and the same spice that's on the chicken. Mesculun and Fresh Raspberry Salad

For the salad:
4 ounces mesclun or two large handfuls
1/4 cup fresh raspberries, washed
1 1/2 tablespoons toasted pine nuts (see page....)
For the vinaigrette:
1 teaspoon Dijon mustard
1 1/2 teaspoon champagne vinegar
3 to 5 tablespoons extra virgin olive oil
Freshly ground black pepper
Optional: 1/4 bunch organic violets or Johnny jump-ups, washed
To prepare:
In a small mixing bowl, whisk together the mustard, vinegar, and olive oil until well mixed. Season with black pepper. Can be made ahead and set aside.
Gently toss the green with the dressing, transfer to salad plates, sprinkle with raspberries, pine nuts and optional violets and serve at once.
