1 teaspoon salt
1 (16-ounce) can chickpeas, drained
1/4 cup tahini
6 garlic cloves
1/3 cup olive oil
1/4 cup lemon juice

4 (8-inch) flour tortillas
6 ounces feta cheese, crumbled
2 tablespoons thinly sliced fresh mint
1/2 teaspoon pepper
1/4 teaspoon paprika
Seed and dice tomatoes; sprinkle with 1 teaspoon salt. Let stand 1 hour in a wire-mesh strainer. Process chickpeas and next 5 ingredients in a food processor until smooth. Spread mixture evenly over tortillas. Sprinkle with tomato, feta, and next 3 ingredients; roll up. Chill 30 minutes. Cut each roll diagonally into 1-inch slices.
Dessert:
Lemon-Blueberry Cream Pie
1 2/3 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter or margarine, melted
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1/4 cup powdered sugar
1 (3.4-ounce) package lemon instant pudding mix
2 teaspoons grated lemon rind
1/2 cup fresh lemon juice
1 pint fresh blueberries
2 tablespoons blueberry preserves
1 cup whipping cream
Garnishes: lemon slices, fresh blueberries
Stir together first 3 ingredients; press evenly in bottom and up sides of a 9-inch pieplate.
Bake piecrust at 350° for 8 minutes; remove piecrust to a wire rack, and cool completely.
Beat cheese, milk, and powdered sugar at medium speed with an electric mixer until creamy. Add pudding mix, rind, and juice; beat until blended. Spread half of lemon mixture evenly into prepared crust.
Stir together blueberries and preserves; spread evenly over lemon mixture. Spread remaining lemon mixture over blueberry mixture; cover and chill 2 hours or until set.
Beat whipping cream with an electric mixer until soft peaks form, and spread around outer edge of pie, forming a 3-inch border. Garnish, if desired.

As a suggestion, since you are serving BBQ, which tends to be quite filling and rich a simple melange of fresh berries with a bit of lemon yogurt on top and crumble some amarettino cookies and sprinkle on the top. Or, cut up lots of different fresh fruits (abundant this time of year), use lots of different colors and textures and marinate in a small amount of Amaretto Liquour during the car ride. Keep chilled. Simple yet really quite elegant.

Quick and simple dessert called Ambrosia,take fruit cocktail drain off juice,place in bowl,add Cool Whip and mix together,then take some coconut flakes,spread it out on a sheet pan and toast at 350 until lightly browned,add to fruit and Cool Whip and chill over night.
