Wanting to add more to my dinner menu. Sometimes I'm not sure what I should cook for supper. Want to try something different.
I have lots of cookbooks but I'm afraid to try some of them.
You know what's yummy if it's your favorite....want to share?
Hint...I love Mexican and Chinese....though willing to try your yummy ideas. Please nothing with alcohol/wine flavor though. Eck!

Answers:
Mexican is my favorite, but the recipe I'm giving you is Italian.

Chop:
1 Vaidalia Onion
1 Green Pepper
1 Red Pepper
1 Yellow Pepper
1-2 Large Portabella Mushrooms
4 Chicken Breasts in 1 inch cubes

You'll also need:
Minced Garlic
Olive Oil
2 Jars of your Favorite Sauce (mine is Carb Options Alfredo Sauce)
1 Box of your favorite noodle type

Start your noodles whenever you like. It depends on how 'done' you want them.

Pour 2 table spoons of olive oil in large sauce pan. Saute onions and 1 heaping table spoon of garlic for about 5-7 min. Add all your peppers and mushrooms. In a separate pan brown the chicken. When chicken is brown your veggies are close to done. Pour your sauce over your veggies and add your chicken. Cook till sauce is boiling.

stir fried pork and ginger.
dead easy use a wok.
ingredients-garlic 2/3 cloves coarsly chopped
fresh ginger,finely sliced.
med onion cut in thinish wedges(bite size).
half red pepper sliced finely.
2-3 large shitaki style mushrooms finely sliced..
pork steak finely sliced.

heat wok add 3-4 tablespoons of oil(cooking oil)
fry garlic for 15-20 seconds.
add pork fry for 3-4 mins
add ginger and fry for another 1 min
add the onion and mushroomsplus a tablespoon of soy sauce and a tablespoon of light soy sauce.
mix well and keep frying for a further 1-2 mins.
add the pepper and a tablespoon of water and half teaspoon of sugar,keep mixing and fry for a further minute.
then dish up with rice of your choice,trust me its amazing,.

Fish Taco, Baja-Style

The batter used to coat the fish varied with the cook but the wok-shaped disc seemed to be the pan of choice for frying the fish. This very easy recipe is the one that Leonelly used for fish that was crisp and tasty, with the flavor of the fish not being overpowered by the coating. Some cooks swear that you must use shark fillets, but any firm white fish works well.

1 large lime

4 white fish fillets, cut in strips about 1-inch wide

2 eggs

1 cup all-purpose flour

Salt

Vegetable oil for frying

8 corn tortillas

Cut the lime in half and squeeze the juice over fish. Allow the fish marinate while preparing the batter.

To make the batter, break the eggs in a bowl and whisk. While mixing with a fork, gradually add only enough flour to form a thin batter. Season with the salt.

Pour the oil to depth of 1 to 2-inches, depending on the thickness of the fish, in a heavy skillet or wok. Heat the oil over medium-high heat to a temperature of 365 degrees.

Dip the fish in the batter and let the excess drip off. Carefully slide the fish in the oil and fry until the fish is done, about 3 minutes and the batter is golden brown, turning once. Remove and drain on paper towels.

Wrap the tortillas in a towel and microwave on high for 30 seconds.

Place the fish in the tortillas and serve. Allow guests to create their own combinations of the following toppings. ( which he forgot to add..... are thinly sliced cabbage, avacado, chopped tomato, onion, salsa, radishes, sliced cucumber and lime )

Yield: 4 servings

Avocado Salsa

Many of the small stands included this on the condiment table. We found that it complemented both beef and fish tacos.

2 medium avocados, pitted and peeled

3 serrano chiles, stems and seeds removed, chopped

1/4 cup chopped onion

2 tablespoons lime juice, fresh preferred

Salt to taste

Chopped fresh cilanto

Put all the ingredients, except the cilantro, into a blender or food processor and puree until smooth.

Pour the mixture into a bowl, garnish with the cilantro and serve.

Yield: 2 cups

Heat Scale: Medium Greek Chicken: super easy and cheap
4 chicken breasts
1 lemon
1 package Feta cheese (the sundried tomato or roasted pepper flavors work great)
salt and pepper

Place chicken in a baking dish. Squeeze lemon over chicken breasts. Salt and pepper as desired, Sprinkle with Feta. Bake at 350 for about 30 minutes. Serve with salad, balsamic and crusty bread or warm pitas. Yummy. How about Spamoodles?

You just need noodles, instant ones are best, some Spam, and Oxo gravy, mix it all together and voila.......Spamoodles!
