I love to make homemade lasagna. And, if I do say so myself, everybody likes this recipe!
I always fiddle with the recipe, but that's the way I am (the sauce - I make my own using browned hamburger and sweet Italian sausage, tomato sauce, minced garlic, grated onion and anything else that I can think of! Heavy cream, a bit of sugar, salt, oyster sauce, A-1 Sauce, you name it!), and I increase the filling ingredients, including the eggs - just to be generous). If you increase, you'll need more lasagna noodles, of course.
If you end up with too much, it freezes well.
I ALWAYS beat the eggs in a separate bowl before adding to the cheeses, just to make sure they are well-incorporated. And it would be a shame to spoil all that cheese if one of the eggs proves to be bad!
I'll give you the straight recipe, I found it on the back of a jar of spaghetti sauce.
I like this recipe because you don't have to cook the lasagna noodles separately, so no extra pot to wash! The noodles turn out fine with no pre-cooking.
Ragu No Boiling Lasagna
prep time 10 minutes
cook time 70 minutes
2 containers (15 oz. ea) ricotta cheese
2 cups shredded mozzarella cheese (about 8 oz.)
1/2 cup grated Parmesan cheese
2 eggs
2 jars (1 lb. 10 oz. ea) Ragu Robusto! Pasta Sauce
-OR-
2 jars (2 lbs. ea) Ragu Rich & Meaty Meat Sauce
12 UNCOOKED lasagna noodles
1 Hefty E*Z Foil Giant Casserole & Lasagne Pan
aluminum foil, to cover
1. Preheat oven to 375. In a bowl, combine ricotta cheese, 1 cup mozzarella cheese, 1/4 cup Parmesan cheese and eggs.
2.In 13 1/2 x 9 5/9 x 2 3/4 inch Hefty E*Z Foil EZ Elegance Giant Casserole & Lasagne Pan, spread 1 cup pasta sauce. Layer 4 uncooked noodles, then 1 cup sauce and 1/2 of the ricotta cheese mixture; repeat. Top with remaining 4 uncooked noodles and 2 cups sauce. Cover tightly with aluminum foil and bake 1 hour.
3.Remove foil and sprinkle with remaining cheeses. Bake uncovered an additional 10 minutes. Serve with remaining sauce, heated.
Makes about 12 servings.
Serve this with garlic toast and your favorite salad, and you've got a hit!

1 cup evaporated skim milk

Cook over medium-high heat until bubbly, stirring constantly. Top with additional Parmesan cheese and fresh basil.
