Ham and Grits Crustless Quiche
Ingredients:
1/2 cup water
1/4 tsp salt
1/3 cup quick-cooking grits, uncooked
a (12 oz.) can evaporated milk
1 1/2 cups chopped ham
1 cup (4oz.) Cheddar cheese, shredded
3 large eggs, lightly beaten
1 Tbsp Chopped fresh parsley
1 tsp Dry mustard
1-2 tsps Hot Sauce

Preheat oven to 350 degrees. Bring salt and water to a boil in sauce pan; stir in grits, remove from heat; cover and let stand 5 minutes.(mixture will be thick). Stir in milk and next 6 ingredients. Pour into sprayed 9 1/2 inch quiche dish or a 9 1/2 inch deep pie plate. Bake for 30-35 minutes. Let stand 10 min. before serving. Cut into wedges. Yield 6 servings.
Variation: Use Italian sausage in place of ham (saute', drain and crumble well) and eliminate mustard and hot sauce.

When travelling in central america i loved that they had yoghurt, granola and fruit for breakfast with honey all the time. I could never be bothered to make something like that at home. That'd get my vote anyway, as a cold option :)

This recipe was given to us by my mother-in-law. We love it! And everyone we serve it too raves about it.
12 slices ham
12 slices swiss cheese
12 eggs
1 cup heavy whipping cream
1/3 cup grated parmesan cheese
12 servings

1. Fold ham slices in half; set side by side in a 9x13 pan.
2. Fold swiss slices in half, layering on top of the ham to form a"nest".
3. Break eggs over the swiss.
4. I usually break the yoke after it's in the pan so there's not a large clump of yoke.
5. Pour cream over the eggs.
6. Sprinkle with parmesan cheese.
7. Bake uncovered for 20-25 minutes at 375 or until eggs reach desired doneness.
8. Let stand for 5 minutes.
9. Is usually served with English muffins but we're watching our carbs!


Make waffles (very easy just use pancake mix) and serve with whatever fresh fruit or berries available in your area ( sugar them), and powdered sugar. And offer the choice of syrup. This goes great with sausage or bacon. It is always a treat.
