2 lb. ground lamb
2 lb. cloves garlic, crushed
1/4 c. lemon juice
1 tsp. basil
1/2 tsp. ground marjoram
1 tsp. thyme
1 tsp. rosemary
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. snipped parsley
8 pita packets
2 tomatoes, chopped
1>cucumber),onion,ketchup,mustar... them all together in a pita bread(cook it using some of the fat from the cooked pork). and all this is gyros!!!

NO WAY!!!!!!! use pork or chicken the woman who said that the "real way" to make gyros is to cook chunks of meat on a skewer is wrong....what she is describing is "souvlaki" ...they DO serve gyros in Greece....I know because that's mostly what I ate when I was there....however I believe it was originally a "Greek-American" dish. Gyros is made with strips of meat, not ground meat, seasoned, pressed into a "loaf" onto a rotisserie and roasted rotisserie style.("gyros" meaning "to turn") this can be complicated and take a long time. You can cheat a little by cooking it in a loaf pan (like meatloaf) and baking it in a water bath....just remember that it IS NOT a meat loaf and do not add breadcrumbs or eggs....just some roasted garlic clove, some oregano, and olive oil should suffice...if using the "cheater method" and cooking it loaf style in a water bath...press meat firmly into pan and use a weight on top of the meat ..like an extra heavy grill press or a clean brick lined with foil...when it is done (1.5 hours or so for a lb of meat at 350) serve it with warmed pitas and tzaziki...(chopped cucumber ,whole fat yogurt, and mint...salt and pepper to taste) enjoy! try a greek salad on the side (cucumber,tomato and olive oil&vinegar, oregano)...yum!btw...you can use any meat...chicken , beef, or lamb...I like lamb best.
