I make an All-Beef Americanized version that tastes great, and doesnt contain as many offensive parts as traditional Haggis. First I bring a pot of water to the boil. I add a calf tongue, and a calf liver, and boil them until they are thoroughly cooked. peel the tongue, and cut it into smaller pieces and allow it to cool. Then cook off a pound or two of lean ground beef, drain it and let it cool. When all meats are cool, run them through the meat grinder. (you may want to grate the tongue if it starts to mush too much. Then add a cube of beef buillion to the water and cook your steel cut oats (also called pinhead oats or Irish oatmeal). Mix all together in a large bowl, and add rubbed sage, salt white pepper, and thyme. I like to take the mix, and place it in a shallow casserole dish, mounding up high. Then i roll a pie dough out very thin, and place it over the haggis mound, and pinch it to the dish. brush with an egg wash, and heat in an oven until the haggis is roperly warmed, and the pie crust is nicely browned. I havent been able to find a sheep stomach in The States, and a calf's stomach is too thick. you can just roll cheesecloth around it, and Ive heard of people stuffing it into a new, clean pantyhose. But I prefer the bread crust. You can also wrap the crust all the way around the haggis, and not use the casserole dish, but it is very diificult to do, and when I did it for the Robert Burns dinner, I almost tore it trying to get it onto the pan. Anyway..it's a tasty recipe. Slainte.

Where do you stay ?

You are really better off buying a haggis - you should be able to order online - especially from butchers in scotland.
