Answers:
How about coconut? Lemon rind? A Hershey's kiss?
Make a round ball and then squash it down with your thumb to make a well. When the cookie is cool, put a dab of jam, lemon curd, or frosting inside.
Skip the fruit and nuts. Roll the dough thinner and cut rounds. When the cookies are cool, spread jam, frosting or even ice cream on one and put another cookie on top to make a sandwich. If using ice cream, freeze it first. If you have a chocolate dough, make a sand which with any of the red flavors of jam or use orange marmalade. Yum!
How about skipping the fruit and rolling the dough balls in cinnamon before you bake them?
