I'm going to have my catering prepare a "taste of america" buffet for one of their projects. I'm looking for a florida/caribbean recipe that has chicken and not too much tropical fruit. It's barely spring in KY and I want to be able to get good ingredients. Any suggestions?

Floribbean Chicken Bites
vegetable oil cooking spray
1 1/2 lbs. boneless skinless chicken breast
14 oz. can low sodium chicken broth
7 oz. package sweetened coconut
1 Cup reduced fat mayonnaise
2 TB. fresh lime juice
1 TSP. lime zest
1/2 to 1 TSP diced chipotle pepper
1 TSP. ground cumin
preheat oven to 400 F. Coat a 13 by 9 inch pan with the cooking spray.
Place the chicken and broth in a medium size skillet; bring to a boil. Cover, reduce heat and simmer for about 10 to 15 minutes.
Place the coconut in the prepared pan; toast 7 to 10 minutes, stirring occasionally.
Combine the mayo, lime juice, lime zest, chipotle pepper, and cumin in a large bowl. Cut the chicken into 1/2 inch cubes and add to the mayo mixture; stir gently to coat. transfer the mayo coated cubes to the coconut pan. Toss gently.
refigerate or serve at once on toothpicks as an appetizer.
Serves: 12 as an appetizer

It has fruit, but you can get it cause it's in season right now. Just grill chicken breasts and lay pineapple and monterey jack cheese on top (grill until cheese melts).
Floribbean Chicken with Papaya Salsa

Ingredients:
1 Egg
1/2 c Fresh lime juice
1 1/2 c Corn flakes crumbs or plain
-bread crumbs
1/2 ts Salt
1/4 ts Freshly ground pepper
3 tb Olive oil
1 tb Butter
4 Chicken breast halves;
-boneless/skinless
Papaya Salsa
Instructions:
1. In a shallow bowl, lightly beat egg and lime juice together.
2. Combine bread crumbs and salt and pepper in a shallow bowl.
3. Heat the oil and butter in a large saute pan until hot. Dip the chicken
breasts in the egg mixture and let the excess drain off. Coat with crumbs,
shaking off the excess. Saute the chicken over moderate heat until golden
on both sides, about four to five minutes on each side. Transfer to paper
towels and let drain.
4. Place chicken on serving plates. Add papaya salsa to the saute pan and
heat for two minutes. Spoon papaya salsa over chicken breasts. Serves
eight.
