Be proud to serve this moist and delicious citrus-spiked cake all dressed up in snowy white coconut.

Cake
1 box Betty Crocker? SuperMoist? white cake mix
Water, vegetable oil and egg whites called for on cake mix package
1 tub Betty Crocker? Whipped fluffy white frosting
1/2 cup flaked coconut
Orange-Coconut Filling
1/4 cup sugar
2 teaspoons cornstarch
1/3 cup water
1 teaspoon grated orange peel
2 teaspoons orange juice
2 tablespoons flaked coconut


1. Heat oven to 350°F. Grease bottom and sides of 2 round pans, 8x1 1/2 or 9x1 1/2 inches, with shortening or spray with cooking spray.
2. Make cake mix as directed on package, using water, oil and egg whites. Bake as directed on package. Cool 10 minutes; remove from pans to wire rack. Cool completely, about 1 hour.
3. In small microwavable bowl, mix sugar and cornstarch . Gradually stir in water. Stir in orange peel and orange juice. Microwave uncovered on High about 1 minute or until mixture thickens and boils; stir. Microwave 30 seconds longer, stirring every 15 seconds. Stir in 2 tablespoons coconut; cool.
4. Fill cake layers with Orange-Coconut Filling. Frost side and top of cake with frosting. Sprinkle 1/2 cup coconut over top.




High Altitude (3500-6500 ft):
Follow High Altitude directions on package. For filling, increase first microwave time to 1 minute 30 seconds, second microwave time to 1 minute.



Heavenly Angel Food Cake
You’ll be pleasantly surprised at how easy this classic cake is to make!

1 1/2 cups powdered sugar
1 cup cake flour
1 1/2 cups egg whites (12)
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 1/2 teaspoons vanilla
1/2 teaspoon almond extract
1/4 teaspoon salt


1. Move oven rack to lowest position. Heat oven to 375oF.
2. Mix powdered sugar and flour; set aside. Beat egg whites and cream of tartar in large bowl with electric mixer on medium speed until foamy. Beat in granulated sugar, 2 tablespoons at a time, on high speed, adding vanilla, almond extract and salt with the last addition of sugar. Continue beating until stiff and glossy meringue forms. Do not underbeat.
3. Sprinkle sugar-flour mixture, 1/4 cup at a time, over meringue, folding in just until sugar-flour mixture disappears. Push batter into ungreased angel food cake pan (tube pan), 10x4 inches. Cut gently through batter with metal spatula.
4. Bake 30 to 35 minutes or until cracks feel dry and top springs back when touched lightly. Immediately turn pan upside down onto heatproof funnel or bottle. Let hang about 2 hours or until cake is completely cool. Loosen side of cake with knife or long, metal spatula; remove from pan.
