My current lover loves Italian food but detests tomato. I tell him that this fruit is second only to pasta in Italian cooking. He insists that he will leave me if I don't find an alternative. Rally round, girls.

either cook him every thing in a cream sauce ( like alfredo) or leave him. i would choose the latter because if he is willing to leave you over a tomato then he has problems.

Ok, try red food coloring. Maybe he'll like that better. Or red icing. If all else fails, she him the door. That way you can use as many tomatoes as you want.

This is a great fresh, light pasta to make when zucchini are in season, or are flourishing in your garden. I do use olive oil to fry them as it lends a nice flavor, but it does not make the dish greasy at all.

The simplicity of the dish allows the flavors of the zucchini and the cheese to shine through. If you are lucky enough to have fresh zucchini from your garden, add some chopped colorful zucchini flowers to this dish for a burst of color.


1 Pound Dried Bow Tie Pasta

4-5 Small to Medium Zucchini

Bunch Of Fresh, Washed, Chopped Parsley

3/4 Cup Fresh Grated Parmesan Cheese

1/4 Cup Olive Oil

2 Large garlic Cloves, Minced

Fresh Ground Pepper

Dash of Salt

Dash of Red Pepper Flakes (Optional)


Slice the zucchini into coins, and fry in the olive oil until golden brown. Drain on paper towels. Add the garlic and remove before it browns. Cook the pasta until al dente, reserving a small cup of the pasta water before draining. Drain the pasta, and add the zucchini to the hot pasta with a little of the water. Mix thoroughly over medium heat, adding the cracked black pepper and red pepper flakes if you are using them. Remove from the heat and add the fresh, chopped parsley and half the cheese. Mix well and serve, offering the additional cheese for on top of the pasta.

In the north it is mostly cream sauce. But if you dont want to then its simple, Buy some pesto sauce! Goes with any pasta dish, add a little butter and water, so that its a little creamier in consistency. Make sure to season well.

To make your own;
Fresh basil leaves, toasted pinenuts, garlic, parmesan(grated) and olive oil , salt and pepper. Sorry I dont know the amount, Im a chef so I never actually weigh anything.
