I think it would be more interesting to ask yourself, 'How do you know you have never eaten pig uterus?'
Plenty of deli sausages or even your cheap supermarket variety contains not just meat but various pig off-cuts and offals (uterus, large intestine, heart, lung, tongue, etc.). Why did you think some sausages are on the 'crunchy' side? ;-) You can't achieve that texture with just meat alone.
