Answers:
Brining porkchops (or any cut of pork) is an excellent way to make them very juicy and flavorful. I highly recommend it. You can brine porkchops for as little as a couple of hours (if that's all the time you have) and it will make a tremendous difference in how moist your porkchops come out.
An easy way to get started with brining: Stir 1 tablespoon of salt into 2 cups of milk. Immerse your porkchops in the milk/salt mixture for at least an hour, or up to 6, cover and refrigerate. When you're ready to prepare them, dry them off with a paper towel, dredge in flour, then egg, and then fresh breadcrumbs mixed with your favorite fresh herbs/salt and pepper. Saute until golden brown on both sides. Depending on the thickness of your chops, you may have to finish them in the oven for a few minutes.
