Pasta is always cheap to make. You can use a can of condensed mushroom soup as the sauce (or any kind of soup i guess) I always did this when i was a student.

it depends on how fussy you are when in comes to nutrition and whbat is served and how much time you intend to spend in the kitchen (especially if you want to spend time with the child). you could do salads, and you could also think of bulk purchasing.
cheap meal ideas? how about bean soups and breads? they are pulses are full of protein and fibre, and breads will make up the carbohydrates.
there you are, a salad will serve you the required fibre, pulses for the required protein, and bread for carbs. (my humble opinion, don't use white bread, because it is made from refined flour which isn't healthy, and according to some people, isn't as filling)

Cheap Eats ..Well Pasta is Always a Winner ..You can make your own sauces. Tossed with Butter or Margarine & Spice's: Garlic &Pepper topped w/Parmeasan Cheese.You can even add frozen mixed Veggie .Also Frozen pk Turkey is a Good sub for ground beef in Spag. or other dishes ..even Meat loaf for a different type of meat loaf go to Castlemans website ( its canned Chii sauce) they have lots of recipes there too. Also Ramen Noodles has a Website too ..& Boy are they Cheap ! Spagetti and vegtable soup , chili any of these and they last a while to .

Dip cube steak in egg, flour, egg, and flour once again and fry. Then make gravy with drippings using one can of evaporated milk with 2 Tbsp flour(I use Wondra). If no drippings left, add butter. If to thick, add a little milk.
Macaroni and Cheese is good. Also Beef Stroganoff using hamburger is good.
Spagetti with spagetti sauce is good. I just brown up hamburger and for each pound of burger, I add 1 15 oz of tomato sauce, 1 tsp basil and 1 tsp of garlic powder, salt and pepper. It's simple sauce but still good. I use this tomato sauce also for swiss steak. TAKE SOME WHEAT FLOUR & ADD JAGGERY FOR SWEETNESS.
MIX WELL IN WATER/MILK.
ADD SOME BUTTER IN PAN & PUT THE ABOVE MIXTURE IN PAN TO MAKE A ROUND FLAT CRUST (LIKE PIZZA).
REPEAT THE SAME PROCURE WITH THE REMAINING MIXTURE.
SERVE WITH MILK/MILK CREAME. eggs any style

Stuffed Possum Roast
1 possum; whole
1 quart cold water
1/8 cup salt
4 or 5 beef bouillon cubes
2 large bay leaves
3 celery stalks; chopped
2 medium onions; sliced
1 bag stuffing; any kind is fine
Pepper to taste
Preheat oven to 350oF. Soak possum in cold salt water for 12 hours.
Rinse meat in cold water; refrigerate about 3-4 hours.
Prepare stuffing according to package directions;
Stuff possum cavity with prepared stuffing. Close the possum cavity tightly.
Place stuffed possum in roasting pan, add water, bouillon cubes, bay leaves, celery and onion and pepper.
After 2 hours turn the meat and reduce heat to 300 oF; cook for 1 hour or until done. 1. chicken rotel with green bean casserole and fried cream corn. sister shubert rolls
