Here are some friends with simlar question as we.And I have this question for many days, anyone help us?
Kitty said: Yes.Help by cake-baking URGENT! Eggs?-I try seach this on internet but no results found.Maybe this is a stupid question.
Mike said: oh,no,you are wrong.I have found as below for this question(Help by cake-baking URGENT! Eggs?),it will help you,my kids.
When I add the eggs to the already beaten sugar-butter mixture and beat a while, eggs "cut off" ( I don't know if this the right expression). The whole mixture looks then like scrabbled eggs! Butter was not warm! I tried twice and both times it landed in the garbage. Anything wrong with the eggs??
Answers:
When you add the eggs add them one or two at a time. Let the mixture come back together and add another egg. Do this BEFORE adding the flour or you will over work the batter. DO NOT HEAT THE BOWL OR THE BUTTER AFTER CREAMING. this will let all the air trapped in the butter escape and the cake will not be as fluffy and have a denser texture. Just keep mixing, it may take a minute or two.
Other Answers:
no nothing is wrong. the butter was not softened. soften it in the microwave a bit next time. it still tastes okay when you don't soften the butter. every thing is okay, and no it wasn't the eggs

What kind of cake are you baking? All ingredients should be room temp, including the eggs. In most receipes you mix butter and shortning, add sugar and then eggs, one at a time mixing well.
