Its Tuesday, and although out in CA its only lunch time... I'm going to have to prepare something for dinner when I get home, and I have to have some 'blog' stuff too...so WHATS FOR DINNER??? You can always include recipes if you are making something unique and special to you. This is going on my blog, so details please!! Thanks in advance!!
Answers:
We are having rib eye steaks marinated in Italian Dressing. I have them marinating now in the bottom of my refrigerator in a dish covered with cling wrap. For sides we are having garlic mash potatoes, green beans, a fruit salad, and a dinner roll. I can not wait, my tummy is growling just by thinking of it.
Other Answers:
Cook Farfalle pasta in chicken broth.
Saute 3 cloves of garlic and 1/2 a small onion chopped in olive oil. Add one can of diced tomatoes with liquid over med-hi to high heat. Add 1/2 cup dry white wine. The liquid should be boilng so that it cooks down. When the pasta is not quite done, take about two ladels of the broth and add to the tomatoes. The starch from the water will help to thickn the liquid a little, though this is not meant to be a thick sauce by any means. Drain pasta, add to tomatoes. Just before serving stir in some chopped fresh basil. Top with real parm. I also add some crushed red pepper to the tomaotes for a little kick. If you want something more substantial, add some chicken (just saute boneless breat in olive oil with Italian seasoning.) Serve with salad and garlic bread, and a glass of vino! Yummy. Its hot here, so we are doing a light dinner
Broiled Dill Salmon

2 tsp. lemon juice
1 tsp. salt
1 T. chopped fresh dill
1/8 tsp. red pepper
4 salmon steaks, 1-inch thick (about 2 lb. total)

Place salmon steaks on lightly-greased pan and brush with half of seasoned butter. Broil, 5 inches from source of heat, 5 to 10 minutes. Turn heat to 400oF, close oven and bake an additional 5 to 8 minutes. Brush with remaining butter blend. Serve. Yields 4 servings.
