I have a recipe for this, but I find that the sauce comes out a bit too thin... I'm NOT looking for recipes that include mayonnaise, though.

This recipe is extremely easy to make and always turns out thick and creamy. The main trick is to add the butter SLOWLY and steadily. the lemon juice and tabasco are essential and should not be eliminated or substituted.
Makes 1 1/4 cups
1. In small saucepan heat : 1 c butter until very hot, but not brown
2. Into container of an electric blender put : 4 egg yolks, 2 T lemon juice, 1/4 t salt, 1/4 t Tabasco. Cover container and turn motor on low speed. Immediately remove cover and pour in the hot butter in a slow,steady stream. When all butter is added, turn off motor.
3. Serve immediately or keep warm by setting container into a sucepan containing 2 inches of hot water. If the suce becomes too thick to pour when ready to use, return container to blender, add: 1 T ot water, and blend briefly.

I think the recipe can get messed up if you use margerine or one of those fake butters, you have to use real butter. LOOKS LIKE YOU SHOULD STICK WITH RECIPES. YOUR NOT MUCH GOOD AT RELIGION & SPIRITUAL.

. Hollandaise Sauce
4 egg yolks
1 tablespoon freshly squeezed lemon juice
1/2 cup unsalted butter, melted (1 stick)
Pinch cayenne
Pinch salt
Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use for the eggs benedict. If the sauce gets too thick, whisk in a few drops of warm water before serving.

It was just straight up grease and almost ruined Christmas dinner. I like to do everything homemade, but I find that the best hollandaise sauce comes from a packet. Knorr makes a good one.
