1 1/2 cups elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
3/4 cup milk, warmed
3/4 cup light cream, warmed
1/4 teaspoon cayenne pepper
2 1/2 cups grated sharp cheese

Plunge the macaroni into rapidly boiling, salted water and cook until al dente. We all know that. Also, a little olive oil or butter added to the water will prevent the pasta from sticking to the bottom, or each other. And don't skimp on the salting either! Well known tips.


Instead of layering the macaroni and pouring the cheese sauce over each layer, drain all the macaroni, return to the warm pot and pour your cheese sauce into the pasta. Remove from heat and add cayenne, and 2 cups cheese. Stir until cheese is melted. Pour over macaroni in casserole. Stir wel to combine. Garnish with remaining cheese, and dot with additional butter.

Bake in preheated 350 ° F oven for 25 to 30 minutes.

Melt 5 tablespoons of butter in a large saucepan over medium high heat. Add 6 tablespoons of flour, 1/4 teaspoon of cayenne pepper and 1 1/2 tablespoons of dry mustard.
Whisk constanly for about 1 minute (until fragrant), and then slowly pour in 5 cups of milk. Whisk constantly until mixture comes to a boil, then reduce heat to med-low and simmer until it becomes about the consistency of heavy cream (about 5 minutes), still stir occansionally.
Take off heat and stir in 8 oz of sharp cheddar, and 8 oz of monteray jack cheese. Once combined add macaroni and stir until coated.
