Pine nuts are the edible seeds of pine trees (family Pinaceae, genus Pinus), extracted from the pinecone and unshelled for use. About 20 species of pine produce seeds large enough to be worth harvesting; in other pines the seeds are also edible, but are too small to be of value as a human food.

They come from the pinon (or pinion) tree. I live in Arizona and pinion trees here are usually on public lands, they are harvested around the fall, people gather them from the forest after they have fallen.. here's a site that gives you a good article about them. By the way they are native to the American South West.

pine nut also called pignoli or Italian nut, pine nuts come from, you guessed it, pine trees. The nut is extracted from the cone usually with heat and is highly labor intensive thus expensive. they have a high fat content and should be stored in airtight containers in your refrigerator. They have a wonderful flavor especially when toasted.

Not sure if these are also called Pinon nuts from Pinon Pine trees. When in Colorado, we picked them up from under the trees. From what I was told the tree will only produce the nuts every 7 years so you had to search for what tree had them that year. Very small nuts but wonderful when roasted.
Pine nuts come from the Pinon pine. Google it and you will find all kinds of information on the Pinon pine. I love pine nuts, they are great in salads.
