I need to know what it will take to make a banana cream pie from scratch and possible alternate ingredients as I am currently in Japan and they, so far that I have seen, do not have the conveniences of pre-made crusts and such. I am making for one of my Japanese tutors, as she has never had it before and says it sounds good. They apparently have a lot of different kinds of cakes in Japan but not very many pies...Thanks!

Ingredients basic Pie shell:

1 1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
3 tablespoons cold water
Directions:

Combine flour and salt in a medium bowl; cut in shortening until crumbly (mixture should have irregular-size pieces).

Sprinkle cold water, 1 tablespoon at a time, evenly over surface, and stir with a fork until dry ingredients are moistened. (Squeeze dough firmly between your fingers after adding 3 tablespoons water; if it falls apart, add remaining tablespoon water.)

Shape dough into a flattened disk; wrap in plastic wrap, and chill 2 hours or freeze 30 minutes. Let stand at room temperature 5 minutes.

Turn dough out onto a floured surface, and roll to 1/8-inch thickness.

Place in a 9-inch pieplate. Trim off excess pastry along edges; fold edges under, and crimp. Prick pastry a few times with a fork if baking. (Do not prick if pastry is going to be filled before baking.)

Bake at 450F for 10 to 12 minutes or until golden brown. Cool on a wire rack. Makes 1 (9-inch) pastry shell.

Banana Cream Pie:
3/4 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 1/4 teaspoons vanilla extract
1 (9 inch) pie crust, baked
4 bananas, sliced
DIRECTIONS:
In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour

Mix. OLD FASHIONED BANANA CREAM PIE

1 pie crust (9 inch), baked (or graham cracker pie shell)
3 tablespoons cornstarch
1 2/3 cups water
14 ounces sweetened condensed milk
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla extract
3 medium bananas
lemon juice
whipped cream

In heavy saucepan, dissolve cornstarch in water; stir in sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly.
Remove from heat; add butter and vanilla. Cool slightly. Slice 2 bananas; dip in lemon juice and drain. Arrange on bottom of prepared crust. Pour filling over bananas; cover. Chill 4 hours or until set.

Spread top with whipped cream. Slice remaining banana; dip in lemon juice, drain and garnish top of pie. Refrigerate leftovers.

Serving Size: 6
